Ingredients

  • 1 bread, white, sliced
  • 1/4 lb (115 g) of low fat cream cheese
  • 2 cups (500 ml) of fresh blueberries
  • 8 eggs, beaten
  • 1 1/2 cup (375 ml) of milk
  • 1/4 cup (65 ml) of maple syrup
1/4 cup (65 ml) liquid butter

Preparation

  • Preheat oven to 350 ° F (180 ° C).
  • After removing the crusts from the bread, cut into 1 inch (2.5cm) cubes (which makes about 10 cups / 2.5 L).
  • Cut cream cheese into small cubes (which gives about 1 cup/250ml).
  • Grease a flat 9 x 9 x 2 inches (23 cm x 23 cm x 5 cm) baking dish. Place half the bread cubes in the dish. Sprinkle the diced cream cheese and about half of the blueberries in the dish. Cover with the bread cubes and the remaining blueberries.
  • Combine eggs, milk, maple syrup and the butter in a bowl. Gently pour over dry mixture.
  • Bake until a knife inserted in center comes out clean, about an hour. Cover with foil if edges are browning too much.
  • Cut into squares and serve with maple syrup of, if desired.
